Apple watch sleep tracker in wrong time zone

Hi I’m using the Apple Watch sleep tracker.

My watch is perfectly synced to my phone and everything displays on the correct timezone except when displaying the time I was asleep the night before.

Instead of saying 00:00-06:57 (for instance) it says 08:00-14:57.

This is particularly bizarre because as you can see it is a time in the future…

Everything else works fine including the wake up alarms.
