I chose the metropolitan face with a tan background and white circle with traditional numbers within and a second hand. I put my arm down and background turns black, the white circle is brown, no second hand, and the numbers are gone. Help!

I think this is because that your watch has always-on-display, so the watch face dims and only shows the necessary. That is just the way it is. You can turn off always-on-display, but then when you lower your wrist, the watch face will just be black.
