I bought series 6 Apple Watch and tried to pair to my iPhone but says IPhone out of date but my phone is 100% up to date. The Apple Watch is charged and I have Wi-Fi to my phone. I can’t pair them.

I assume your iPhone 12 is running iOS 16 as your tag says. By any chance is the watch running watchOS 10 Beta? If so, it cannot be downgraded from the watch. Your only option is to install iOS 17 Beta on your iPhone.
