when i activate my watch it keep asking for my icloud phone number used at the time of activation. only on my icloud account. i dont have access to that number any longer. how can i change that number.

this situation stems from two form factor. i used the ID/password sucessfully but cant get pass the second section without the phone number used to activate the icloud account.
Are you logged in with the Apple ID you're using to activate the Watch on the iPhone? If so, you should be able to change your Trusted Phone Number in Settings, as described above.
