Can I keep my text and call history from being on our statement

If everyone each has their own unique AppleID, then “no” everything is kept separated.

If you are “sharing” a single common AppleID — which is NOT Family Sharing — everyone will see everything … and far worse.

Use parental controls on your child's iPhone, iPad, and iPod touch - Apple Support

Then something’s drastically amiss.

There is no reason for ANYONE else to have access you your Account.

Being part of a family share makes no difference.

When you change your AppleID password, make sure to check “sign-off” all devices.

Share your Device passcode(s) and AppleID passwords w/ no one.

Enable 2FA and ensure that your Trusted Numbers are REALLY trustworthy.
