Apple Watch pairing issues

My Apple Watch keeps unpairing as I am trying to pair it at setup. I just got it and I keep trying to set it up but every time I try to pair it it unpairs 30 seconds later.

I have an iPhone 11 - ios 16.6 which my phone says is up to date. The Apple Watch is an early one that has just had a new battery installed. My watch has been disconnected from iCloud and is not connected elsewhere to my knowledge…..

That's good you got it paired. But be advised that Apple, nor Apple Authorized Service Providers actually replace the battery in Apple Watch. Instead, for the price of a battery replacement, they give you a replacement watch. If you had your battery replaced by a 3rd party shop, I'd be careful with the watch. For example, since it would not have been certified by Apple, I'd NEVER get it near water as the water seal can't be guaranteed to keep water out.
