On my Mac I want to save electronic signature in preview to my desktop, when I create a signature from sketch on my iPhone for pages & want to resize & position it changes the documents settings. How can I just simply slide from desktop to document, in this case pages?

not possible. Sig files in Preview.app are highly guarded (encrypted) for security purposes...
Do something independent— create a stand alone image with a transparent background, to copy & paste as needed
ex.

Preview won't allow exporting signatures, and they are poor quality when screen captured to the Desktop. If you want a professional signature, then acquire a digitizer tablet, generate a signature external to Preview, and then flood remove the background from that signature image using something like the Affinity Designer or Photo trial.
