How can I make some messages private
This would largely be determined by how you are attempting to exchange messages with others.
If you are using Apple's Messages App, Messages that you send to users of Apple devices will be sent via Apple's iMessage service. iMessage is fully end-to-end encrypted - and can only be seen by the recipient. As such, these messages are private between you and the intended recipient.
Messages sent securely via iMessage are displayed within blue bubbles in the Messages App.
If you have an associated iPhone that has been configured for Message Forwarding to your iPad, messages sent to Android or other non-Apple devices over Cellular SMS/MMS Messaging will be shown within green bubbles.
