Open the Messages app

Tap on Edit

Tap on Show Recently Deleted

If the messages were deleted within the last 30 days, they will appear in Recently Deleted

If the messages do not appear in Recently Deleted, they were deleted more than 30 days ago and have now been permanently deleted.
