I’ve not encountered middle-of-the-day updates, unless the update itself somehow got corrupted and had to be re-downloaded, or if the installations of the updates were very delayed.

Check with Apple Support.

And yes, TheLittles’ reply does not seem to be related.

Getting Intermittent Updates with Shut Downs:

Q2. "[...]shuts it off disconnecting a phone call without notice. The phone is set to update automatically at night, not randomly during the day"

A2. If it is just shutting down and not staring back up, then no, it is not in a Boot Loop. Powering it back on, and you are able to get into the Home Screen, then no, it is not in a Boot Loop. As to what is occurring, not sure, other than a bug in the update.
