On my iPhone 14 pro, the instagram app seems to have a different notification tone, as opposed to what I selected to be the default text tone (note). The other apps are just fine with the tone I selected. I have gone through the settings but to no avail. I just want Instagram to also have the same notification tone as all other apps.

The default notification tone has changed in iOS 17.
It was Tri-tone since the iPhone was originally introduced, and now it's Rebound.
"Default" means if an app didn't assign its custom tone for its own notifications or gives no option to change it inside the app, the default iOS tone will be used.
So it's not Text Tone from Settings > Sounds &Haptics nor anyone else from there.
Some examples:
WhatsApp, Telegram, Signal — all they give a choice;
Instagram, Facebook and most others — not.
The new Rebound tone is significantly quieter, many people are not happy with it.
It is/was no way to change it. Now live with it.
P.S.: It's funny, the Health app still notifies me with tri-tone.

After ios 17 update instagram notification is change and this is disgusting I don’t like this sound is irritated in my head solve this problem 😑
Same here, i hate the new ios 17 instagram notification sound.
They have to recover it to tri tone, or at least let us change the sound in settings.
Then how the change came after upgrading to ios 17? Specifically the very same minute after my phone rebooted

well not really up to instagram.. bcz the tone of the notification changed when the phone gets updated.
Some apps retained old sound but as updates come they keep getting the same boring notification tone
So how come all sounds on my phone except ringtone are the same since ios17 update?
