What’s with the “Keyboard Data (Chinese & Japanese). I have to backup my iPhone. What should I do? Should I backup this thing or not? Etc

No need to include it if you do not type those languages. No problem if you do include it.

How do you remove it? I don’t se it on my apps even though it shows as an iCloud app.

There should be a place in the settings where you look at backups where you can choose to not include it I think.
