I want to change from family plan to single plan. My kids are not using so i don't see the benefit, unless i am missing benefits to the family plan other then I Tunes.

Which "plan" are you on exactly? Apple Music? Apple One? Apple One includes many plans, not just music. Bundle Apple subscriptions with Apple One - Apple Support

Change to a different plan using an iPad or iPhone:

1. Open the Settings app. 

2. Tap your name, then tap Subscriptions.

3. Tap the name of the subscription that you want to change.

4. Tap See All Plans, then follow the onscreen instructions to complete your purchase.

For other devices, read the support article.

If nobody else is using it, switch to the single plan. The only thing you will lose is access to things that others have purchased.
