Since the iOS 17 update the volume goes up and down by itself.

Hello,

You should try to restart your iPhone first and make sure nothing is connected via Bluetooth like AirPods or headphones that could be controlling the volume on your iPhone. If that doesn't work, then I would advise reporting the issue to Apple at feedbackassistant.apple.com.
