Understanding Activty Monitor's CPU Time

According to the summary, I have 46:69% of my processor free to do some work.

But I have two processes that are running at over 100%.

Can someone help me understand this?

A Mac's CPU has multiple "cores" each one of which can use up to 100% of its capacity.

To identify your model MacBook Air and to determine its CPU type, please read Identify your MacBook Air model - Apple Support.

Although you did not ask, a Mac will become objectionably slow if its CPU "idle" time is in the 50% range as that one is showing.
