My devices are already updated to version 16.7. Is this version ok?
I was told there was a security issue and told to update to version 16.6.1 at my job to avoid security issues on my iPad

iPadOS 16.7 and iPadOS 17.0.1 are now current - and include exactly the same security updates for your iPad. Upgrade to iPadOS 17.x is entirely optional at this time.
As such, with iPadOS 16.7 installed, iPadOS is as secure as is possible.
