I deleted my eSIM card by accident. How do I fix this and I can’t call out my phone won’t work.

If you've deleted the eSIM from your device, the only option to restore it is to contact your cellular provider for assistance. This is mentioned in article, How to erase the eSIM on your iPhone - Apple Support.
"If you erase your eSIM, you'll need to contact your carrier to get a new one. Then set up your new eSIM."
