how do i arrange apps in dock apple watch ultra 2
I do not see an option for dock order in ios 10.01.1

Options for organizing apps on an Apple Watch running watchOS 10 are outlined at Organize apps on Apple Watch.
Sorting apps in the App Switcher or Dock was a function that existed in watchOS 9 and earlier but is no longer present per Use the App Switcher on your Apple Watch:
"Sort by Recents or Favorites in watchOS 9 and earlier
In watchOS 9 and earlier, you can sort the Dock (App Switcher) by Recents or Favorites."
