Open the screen shot in Preview, select the area you want to keep and choose "Crop" from the Tools menu.

Just to add a little to what dialabrain said:
1) You can set it so that screenshots open directly in Preview. This is my personal choice, as it makes it easy to crop, and annotate. Just press Command-Shift-5 then click Options and select Preview
2) Command-K is the shortcut for Crop. Very handy, IMO.
