I have Apples Studio Display, I leave it connected pretty much to my 16" 2021 MBP all the time. I've read that keeping your battery @100% all the time will decrease the life or damage the battery.
Is this true? Could apple make a setting where you could connect to your Studio Display and select not to charge?

Not true as long as you use the Apple supplied charger. Use of any other charge is an unknown. You'd have to ask the maker and then decide if that's who you want to trust.
