"Safari can't find the server" is a different problem. If I try to load "adservice.google.com.au" all I get is a 404 error which is the same thing. It means that address just doesn't exist.
Try removing the content blockers.
In general: If Safari doesn't open a page or work as expected on your Mac - Apple Support.
These problems are all due to obnoxious advertisements and Google's tenacity for tracking every mouse click and key stroke.
