Can not edit dialed number

Changing the Phone Number while in an App:

You Cant: What you are looking to perform is not an option. So, in the mean time, take a screenshot of what you are about to change from, as a way to have something to refer to, when you need to add the rest, incase you forget what those numbers are.

Recommend this to Apple:

Do your Part: If you think this is a useless feature of Apple, then inform Apple of this. Apple wont get back to you directly on this, but the more feedback they receive on this, the more they'll know what suits their customers' needs and wants:

2. Select: "Feature Request" for the "Feedback Type"
3. Comment: on why you want this this be an option. Include th eURL of this thread.
4. Perceed from thee as necessary

You are correct that, in your example, you cannot just only delete and replace the number 8. You do not have to delete the entire number. You can use the X key which is to the right of the green phone button until you reach the number that you want to edit.
