im currently charging my iPhone 15 with 20w apple brick, but it gets very hot and I don’t like that for my battery health, I only charge my phone trough the night so there’s no need for fast charging. Can I charge my iPhone 15 with 5w apple charging brick? Is it safe for the long health of my battery? And after that, what usb-A to usb-c cable should I use? Any requirement?

It can but it will be slow to charge with a 5W
The getting hot when it's charging will not affect your battery health for as far as I know.
With t 5 V you will need an usb a to usb c, for as far as I know there are no Apple Original ones for that
You could use your old 5W USB with a Lightning cable and an adaptor like
USB-C to Lightning Adapter - Apple (UK) (there will be the same item in other regions)
This combination should work based on my tests. The only concern is whether 5W will be enough to charge fully in the time available.
