What happened to the find my iPhone option on the watch after the 17. update?

Because it is now MORE useful. You can press the flat oval side button no matter what is being displayed on your screen and get to Control Center.

You no longer need to get back to a watch face to access the Control Center.

The control center us now reached by single press of the large side button

They didn't.

Single press the long side button.
