Just purchased iPhone 15 pro max. Cancelled my protection 360 plan with T-Mobile so I could get AppleCare + through Apple. Problem is, it’s still showing covered by T-Mobiles plan when I check availability from Apple. How can I resolve and get Apple care +

You would need to check with T Mobile on their coverage. Apple would have no way to check this or make changes to their plan. You can purchase AppleCare through the site or by contacting Apple.
