my phone is iPhone X, how you pair it with my iwatch hermes series 9?
Is it possible to pair my iPhone X to my new iwatch hermes series 9? My watch is up to date with the iOS 17 but the manuals says I should have iPhone XS or newer.

What iOS version is on your iPhone X? iOS is not installed on your watch - ii is watchOS (which I assume is watchOS 10.X). If it is watchOS 10.X, then it requires iOS 17.X on the paired iPhone. I don't believe that can be installed on an iPhone X (iOIS 17 requires at least an iPhone XS).
