Apple TV is not a provider like Direct TV. You cannot switch to it like that, and it does not offer packaged channel deals like your TV provider does. You can remove Direct TV from the Provider's section in the Settings App, or sign out from your Direct-TV provider's account in each specific app that is using it.

For the general provider setup on the Apple TV,

Go to Settings > Users and Accounts > TV Provider > Remove TV Provider

You can subscribe to individual services on the Apple TV, like Netflix, HBO, CBC etc... through their own apps.

You can also subscribe to apple's own TV+ service if you want to, directly in the Apple TV app.
