How do I activate airplay?

How do I activate airplay? When I play a Youtube broadcast the youtube screen shows a logo which is the AIRPlay symbol. If I engage it my apple tv device brings the signal to my TV. But when I try to show my photos on TV the Airplay button does not appear so I can't link my photos to TV. How do I access this Airplay button from my photo app or anywhere else on my Mac Book?

We have multiple Apple TV and AirPlay-capable TVs. One TV, in particular, shows up as a different icon, and we have a significant lagging issue mirroring this specific TV from iPhone, iPad or Mac. No issue with Miracasting from Windows/Androids. What's odd is that we have the same TV model in adjacent rooms, and they show up with Apple TV icons and not 'display' icons, and have no issues mirroring from Apple devices. I want to show my Photos on a Smart TV (Samsung 6) using Airplay I cannot toggle AirPay out of Off. Any suggestions on how to get Airplay to work with Samsung TV?

Safari Video doesn't mirror in full screen to Apple TV Unless it's a specific app like IOS Youtube, I cannot get my iPhone to either airplay video (it wants to airplay music instead) OR even Mirror the screen in full screen. With Youtube there IS a native airplay protocol built in from the screen without having to swipe down, but I cannot for the life of me get a video in Safari to do the same. There are some complex buggy workarounds involving Picture in Picture mentioned but they all lead to loss in video quality and stuttering. Has anyone got a simple solution.
