Note 2: I am not talking about signing out of the game, but to remove the link between my account to the game. On the account page of Apple, we can do that for Apple ID sign-ins but not Game Center.

Hi __ag,

Your Game Center account is your Apple ID which is also tied to your iCloud account. To delete your Game Center account would be deleting your entire Apple ID and iCloud information as seen in your related articled How to delete your Apple ID account.

If you no longer want to use Game Center you can sign out of it:

On your iPhone or iPad, go to Settings > Game Center > Sign Out
On your Mac, go to System Settings > Game Center > Sign Out.

If you want to delete the data from your games on iCloud go to:

On your iPhone or iPad, Settings > [Your Name] > iCloud > Manage Account Storage > [App] > Delete Data from iCloud
On your Mac, go yo System Settings > [Your Name] > iCloud > Manage (Account Storage) > [App] > Delete Data from iCloud
