my iPhone is currently syncing all search history with Mac book where I use chrome.
how can I deactivate that? In settings > safari the toggle „Share across devices“ is not available.

If you'd like to stop seeing your Safari data shared across devices, you will want to turn off Safari in iCloud settings on your devices. This article has further information:
