As for your Apple ID, if you changed the password and have Two-Factor Authentication enabled, no one can sign in unless they have your password and have access to a verification code. Unless you have reason to believe your Apple ID has been compromised, changing your password should be enough to keep your account secure. When you change your password your account is not removed from the device but is signed out and challenged with your password. Removing your Apple ID from your devices leaves them vulnerable to theft because it would disable Find My and Activation Lock. Again, changing your password and using Two-Factor Authentication should be enough to protect your account.
