I have received an IPhone13. I would like to configure it for my wife. I currently have an iPhone14 under my name. When I try to do QuickStart it appears to transfer the data from my iPhone to the new iPhone and uses my credentials. I want the two iPhones to have different credentials

Not sure what you mean by "link". As you have noted, if you transfer the data on your phone to your wife's phone, it will look like your phone.
If you want the two phones to have "different credentials", then you surely do not want to "link" the phones together.
Instead, you need to set up your wife's phone completely separately from your phone......including setting up a different Apple ID and Password for your wife.
To do this, you would erase your wife's phone and then start over again with a new setup....and not use Quick Start to transfer the data from your phone to your wife's phone.
On your wife's phone......... Tap Settings > General > Transfer or Reset iPhone > Erase All Content and Settings. The phone will now restart to the "hello" screen so you can set it up again.
