IMessage shows “delivered” hours or days after sending
Im not sure if I was blocked or not… My messages to one particular person don’t immediately show as delivered but after about a day or two they show “delivered”.

Although iPhones sometimes use SMS messages to set up iMessage, most iMessages travel over the Internet. For delivery of an iMessage to succeed,
If your recipient only connects their phone to the Internet every once in a while, it could be that the delivery times correspond roughly to when they go online.

About the Shown Date of an eMail:
This is something on the eMail provider's end --there is nothing that can be done to change it.
View the Headers:
I would view the header of the eMail to trace down when it was officially sent and received, by and from, each server, respectively. Watch a few videos on YouTube on how to do this.
