Up until a few weeks ago when I read emails on iPad they would show as read on Mac. Now they show as unread and even when I delete on iPad they show as unread on Mac.

Email message status is dependent on your devices syncing with the mail server.
Try rebuilding your Mac mailbox and see if that helps, you may also have to remove and add the account back:
