If I listen to Apple Music in car and connect to Bluetooth only and not CarPlay am I leaving myself open to potential breach or hack by car’s stereo system? Is my activity still encrypted and secure?

Have you jailbroken your phone? Are you a high profile activist, journalist or politician whose data would be worth hundreds of thousands of dollars to acquire? If you are not, hacking should be down at the bottom of your worry list. More important concerns would be not falling victim to phishing emails or texts, only dealing with software or services with adequate privacy policies and making sure you eat enough leafy greens and get enough sleep at night.
Your car's stereo system is not interested in hacking your phone, even if it was sentient and had the ability to do so.
I should’ve clarified. I’m talking about a rental car for instance. Would it be similar to a public WiFi type scenario
