I've seen people asking for the ability to rename cards in Apple Wallet, going back at least six years. Most of us have multiple cards and being able to rename and reorder how the cards are displayed in Wallet would be a massive help. Will this ever be a thing?
”No” to renaming … while a good idea … the “Card Displayed” is governed by the card’s issuer.
But we’ve been able to “re-order” cards within Wallet - by “dragging” - for at least four (4) years. (With the release of AppleCard in Fall 2019)
