I want to change my iPhone's layout of icons

I used to be able to configure the layout of icons on my iPhone using iTunes.

As that is no longer an option I'm struggling to find out how to do the same thing an other way!

That is correct. That capability was removed many years ago.

As you observed, “an[]other way” is required. Ferd II supplied the “other way”.
