iOS version not available on my iPhone

I have an iPhone 8 and the iOS Version is 16.7.2 stating that it is currently up to date. I keep Update Automatically on at all times. It doesn't allow me to select anything more recent. My work Outlook now requires 17.0.3 or higher so it is not letting me access my work emails via the app on my phone. Is there a way to get the appropriate version of iOS on my phone manually?
