Airtag jamming by thieves
Is it possible for an Apple Airtag to be jammed by thieves if they find one hidden in your car to disable tracking your car?

The AirTag has a Bluetooth beacon. If they have some sort of Bluetooth jamming device it could be possible. However, if they can locate the tag (which should be easy), they can just remove its battery or throw it away.
If your goal is to use an AirTag as an anti-theft device, you are using the wrong thing for this purpose. Instead you should look into something that relies on GPS, not Bluetooth, like the LoJack.
