my apple watch SE stopped working after I went for a short swim? I thought it was water proof/resistant.

Water resistance is neither permanent nor guaranteed, you were relatively unlucky though

Try holding in Crown and Side Button in together. If the Apple Logo doesn’t appear after 30 seconds the Watch is probably damaged beyond repair.

If it appears, let go and see if it recovers.
