How do I reset a MacBook Pro owned by the company returned by an offboarded employee? We do not know or have a way to get the password for the local user.
The local account logged into the MacBook Pro 16" is locked currently.

Are you saying you have no admin account you can log in to and the Mac was not Managed by an MDM?
Did the employee log in with his Apple ID?
If so, you will need to get the original purchase receipt and the company's legal representative and take the Mac down to an Apple Store so they can help you unlock it. No other way to do it, if the Mac is logged in to their Apple ID.
If not, you may be able to boot into Recovery console and erase the Mac and set it up again.

Corporate Macs should be managed, so the you can easily erase them, and set them up again even if thye are logged in to the employees Apple ID.
