You cannot revert an Watch to a previous version of watchOS.

Went on YouTube found plenty alternative and compatible smart watches . Garmin and TAG probably the best options for me, to the Apple Watch with much better longer life batteries!
Those watches DO NOT pair with an iPhone. They connect to an app that you download to an iPhone.
There is a big difference.
