I have had my phone for 2 weeks, yesterday I was away from home, 5g connection to my mobile provider but no apps were working, settings all OK to use mobile data. Restarted phone 3 times. No change. After an hour it started working then same issue later in the day. Anyone else experienced this ? I use my phone for courier work so this is a massive issue for me

I would try contacting your cellular carrier and ask them if everything is (was) okay on their side when you encountered that issue. Ask also if they have updates for your SIM card or eSim, and/or check your/their configuration.
If the issue persists, since your iPhone is still covered by warranty, I suggest that you make an appointment (*) and have your device inspected at an Apple Store or AASP (Apple Authorized Service Provider) among this list:--> https://locate.apple.com/choose-country-region . After checking it out, they'll give you all the available options.
