Have recipient set up in Hide my Email but when I try to send a new email a new "hide my email" address keeps showing in the from field

On macOS 11, hide my email is not avaliable. It is only available on Macs running macOS 12 (Monterey) and Above

I have been using hidden email addresses for some time, I can access my list of "hide my email" addresses and the associated recipients and I can create new ones, but I can't add or use them when I compose new emails?
Unfortunately there are no newer OS updates available for my computer at this time.
