How to secure my account information from stolen iPhone?

Here is screenshots showing no carrier and my previous xr on account Hi my iPhone XR was stolen. The Sim card was taken by my sister that knows all my information. She is my twin and a few weeks later my promax 14 that I was never completely transferred it to over to is off SOS mode and it says I don’t have an ECM and ESIM and I need to make sure my account is secure for myself and my daughter we share 2TB of iCloud, and if anyone can help information anything I’d appreciate it. I don’t know how to get a ECM. I don’t know how to stop for her from logging into all my apps that she’s using the free services that I’ve paid for but any help I’d appreciate it. Thank you
