If I'm getting a new phone plan (new provider but keeping my existing phone) and I have not backed up any of my information or data because there is no storage room.
when changing the SIM card will I lose my photos and documents or will it all stay on my current phone even when changing the SIM?

It'll stay on the iPhone, except for any contacts you may have put onto the SIM card from a non-Apple phone. Back it up as soon as you can; other things may cause the data to be erased.
