Just looking for one phone number deleted a couple days ago from recent calls

Your cellular carrier should have tracks of it (generally they keep it for 6-12 months). Ask them for a detailed incoming/outgoing calls list.

Sorry, but there's no other way to retrieve a phone number if it has been deleted it from recent calls list on your iPhone.
