I've just bought a new IMAC M3 and a new card for Office Home & Student 2021. Unfortunately once I log in my Microsoft account and insert the Product Key Code, Office download doesn't take place. Someone can help?

That sounds like a question that should be posed to Microsoft Support personnel as it's an MS product.
Is that the installer for Microsoft 365 or Office 2021 Home and Student?
Seems like the OP may want to download their choice of the Office 2021 suite with or without Teams.
