I have a Keychron K4 keyboard I use with my M1 Mac mini and suddenly I am no longer able to type the degree symbol using the (shift-opt-8) shortcut. The keyboard is set to Mac OS and it used to work, but no longer does. It only types the number 8 when I try to use the shortcut. I use this symbol often and would like to figure out what happened. Anyone ever have this issue?

If holding down option does nothing with any letter key, it sounds like you have the Unicode Hex keyboard active. If so, Remove it.
So shift option just gives you the number for all those keys?
What do you have in the list at system settings > keyboard > text input > edit > input sources?

What do you get for option shift 7 and option shift k?
I can’t think of a macOS setting which could cause this. Try asking Keychron support as well.

I tried the path you suggested and I get to keyboard and underneath that is listed Input Sources. I don't see any edit option. And I tried to take a screenshot to show you what I got but I was unable to do that as well. SMH
There are two boxes to check. The first one says: Select the previous input source. The second: Select next source in input menu
I get a 7 with the first and the with the k
