f you use your Apple Watch every day, then 100% before you put it on.
If you enable Optimized Charging, then it will charge to 80% until near the time you normally take the Apple Watch off the charger, when it will finish the charging to 100%.
Just put the Apple Watch on the charger, and take it off when you use it. Do not worry about the charge level unless you are going to power off the Apple Watch and stop wearing it for months. Then it is a good idea to only charge it to say 80% and power it off for long term storage.
